Roast indirect for 3 1/2 to 4 hours at 275 to 200 degrees.

Thanks for all the kind comments.
These were tougher than normal ribs so at 165 degrees internal temp I foiled with'
some red wine and beef broth to melt the fat down into pure goodness.

I'd fall off the diet wagon for that! Looks absolutely delicious--but you trimmed the short ribs, right--got rid of ALL the fat? Sure, you did. That's what I'd tell my nutritionist!
