A great breakfast... Sausage Gravy (Sawmill Gravy) over homemade peppercorn biscuits with a perfectly poached egg.

Sausage gravy is so simple I don't have a recipe but it's something like this...
1/2 pound sausage
1/3 cub diced yellow onion
1 teaspoon freshly ground black pepper
1/2 teaspoon coarse kosher salt
2 tablespoons AP flour
2 cups whole milk
1 to 3 teaspoons hot sauce, to taste
Crumble the sausage into a skillet and cook until barely done. Add the onion and cook until the onion wilts. Add the flour and cook for two to three minutes to eliminate the raw flour taste. Slowly pour in the milk, stirring constantly until the mixture is smooth. Add the hot sauce. Cook for two to three minutes until the mixture thickens. Season with salt and pepper.

OBTW, not sure it's true but I grew up thinking sawmill gravy had cornmeal in it and got its name form the resulting sawdust-like texture.
