Title: Smoked Tri Tip

Took a tri tip smoked it in the smoke box of our MAK grill for one hour with Peppered cow seasoning on it. The vac sealed in the frig overnight. Next day sous vide at 140 for 6 hours then a sear in a cast iron pan before serving. Came out real good.

Wow!  That looks really good.  Did the sous vide method "tenderize" the meat any?  I would expect it would.

Jim I was outback yesterday and thought I smelled a Tri-tip cooking ;)

Looks fantastic! I might need to break out the Dork Food DSV and make one too!

I'm next, I got my Anova last week and I got two tri's in the fridge just begging to be cooked, I know what method I'm gonna use this time.  ;)

I'm a rookie at SV, just got my Anova on Wednesday and have done chicken breasts, sirloin steak, and sausages so far.  You definetly want to have good vacuum seal system, I use a Food Saver.  The alternative method of using ZipLock bags and squeezing the air out of them does not work very well, invest in a good vacuum seal system if you haven't already, you'll be glad you did.

Using the Anova is very simple, the touch screen display is so easy to use, set it and forget it.  I have used my Thermapen to check water temps while cooking and the temps are even throughout the entire water bath and the readings I get on the Thermapen are within 0.5F of what I set the Anova at.

As I use it more and learn more I'lll post my progress.

the Anova works great. That was our first cook. The Tri tip was tender compared to regular cooking methods. It could have been done at a lower temp say 135 or 130. The family likes their a little more to the medium side. I didn't have a photo but we did make a foil lid to go over the top and I wrap the pot with a towel , wasn't needed but why not help?
