Many years ago I was fortunate to be able to try some pheasant jerky from a neighbor who was born and raised in South Dakota. He brought back some pheasant jerky from a relative on one of his trips home. I still recall how tasty it was. Not too long ago a friend of mine from here in NC told me he was going to visit his son in Michigan and planned to do some pheasant hunting. I asked him for a couple of pheasant to try and make my own pheasant jerky. Low and behold he gave me four birds a while back. The next thing I needed to do was figure out what kind of marinade to use. I gave Tee a call and asked him to make me a small batch of his secret blend marinade. I have had some of Tee’s marinade (a very orange teriyaki flavored marinade) on elk jerky and on his smoked trout. I like the flavors since they seem to complement the meat. He usually adds a little heat in the form of some red pepper. I didn’t have any powdered red pepper, so I decided to add some powdered jalapeño to some of the jerky. Since I must save some of the non-heat variety jerky for the guy that supplied the pheasant (he can’t eat anything hot or approaching hot), that is why I did not make it al;l the same. Here are a few pictures of the process. No unicorn jerky here!

The flavor of the straight marinade was absolutely wonderful. Didn't care for the spicy version very much. The orange flavor is great with the pheasant. If I ever get anymore pheasant, I'll have to sweet talk Tee into some more marinade.

Never had pheasant jerky (have had it cooked normally), but damn if I don't want some now.

Well, there is some good news. I received some more pheasant. It is in the freezer and will be available for making more pheasant jerky for the Fall Gathering.

Art, Tee gave me a sample when he was at the house. All I can say is perfect! Killer jerky !! The texture was a little softer but I enjoyed the heck out of it!
