Some time you see a side dish made of eggplant .
today we made it and it is simple .
slice the eggplant sprinkle salt over it to remove the moist , leave it for an hour . in a dish put white grapes vinegar ,few sliced cloves of garlic and few sliced chillies
fry the eggplant in sunflower oil . and drop them in the vinegar . if the vinegar is to powerful to your taste you can add water .
now leave it for few hours .

That looks really good? Is the vinegar cold or boiling? Hard to tell from the pic.

I have never heard of white grape vinegar..but I make my own chive vinegar. I just cut the tops off the chive plants after they bloom, leaving about an inch of the chive on them. Put them in white vinegar and let them steep for a couple of months. they turn purplish from the bloom but you can put it on anything that you want an oniony flavor to. I make it every year as I have a ton of chives. Pam .☆´¯`•.¸¸. ི♥ྀ.

The oil that i fry the eggplant is hot but the vinegar is cold
