Title: Standing Rib Roast

If this doesn't convince anyone to try SV nothing will.  ;)

Put a standing rib roast (USDA Select) I got from my local grocery store (Smith's) in the SV bath @ 130F for 8 hours yesterday. Since it was getting late I put in in the fridge overnight still in the vacuum sealed bag I did the SV cook in.

Today I pulled it out seasoned it with fresh ground pepper & sea salt and put it in the BEESR on HI (15) for 30 minutes for the sear, preheated the BEESR for 15 minutes before putting it in.

Here is she is in all her glory a perfect medium rare all the way through.  And for the tenderness, well it was just as tender and juicy as any prime cut I have ever had anywhere.

Thanks, it was a last minute decision to use the BEESR, I was going to pan sear it like T did his but when I looked out on the patio and saw the BEESR and the Traeger staring at me begging to be used.  I went with the BEESR because it can get up to 525F vs the Traeger Jr that only goes to 450F.  I'm sure the Traeger would have done a nice job too, I just wanted to get the highest heat I could get for the quickest sear.

Wow!!! Looks awesome!

Good choice on the BEESR! Better to encircle the meat with infrared energy to produce a nice crust and sear ;)

Thanks, I think the BEESR is going to be my #1 choice for sear now that I have seen the results.

I would pick a Negra Modelo....smooth, rich - but not too heavy. No bitterness.

Probably true but I don't want to destroy my taste buds again with Schlitz and Old Style.  :o

Looks great - pair that up with an Elysian Immortal IPA and all will be right and just in the world (OK, maybe not but it's a good start).

Nice cook - amazing how consistent the meat is all the way through.

Thanks for supporting the Red Hook - we live just down the road from the original Red Hook brewery (we were going there before Bud bought them out) they make some solid barley pop for sure!  :D :D :D

And that I did, there was a liquor store across the street from the hotel we stayed at in Galena that had Schlitz right next to the Old Style.....BARF!!!   I went straight for the Fat Tire and Jack Daniels.   ;)

That's the other positive I like about SV the consistent cook all the way through.  I tried a lot of IPA's but haven't tried an Elysian Immortal IPA, will have to look for it on my next trip to Total Wine.  ;)

Those Red Hooks are pretty darn good too, sometimes I get a case of their variety pack and get a taste of them all.  ;)

Now we talking goooood.   There is absolutely nothing Stone makes that I don't like. Every time we go to Southern California the Stone Brewery is at the top of my list to go to, I love that place and their beers.  ;)

I have the problem, so many recipes - so little time. And people ask me what do I do with all the spare time I have since I retired!!! I just laugh and show them the pictures.   :P
