I picked up a package of Flanken cut ribs the other day. This morning I was contemplating how I
would fix them. I didn’t have all the ingredients for Korean ribs so I went with the Magic. I mixed
1.5 tablespoons of WOW with 3 tablespoons of M3. I coated the ribs with EVOO and threw
everything into a zip lock bag and mixed it up. They were refrigerated for about 8 hours.

I decided I wanted a little extra smoke flavor so I cold smoked them for 45 minutes using Cookin
Pellets Perfect mix.

I pulled the ribs off the Grid Iron and fired it up to 350. Got the grill grates nice and hot and put
the ribs on.

5 minutes per side and they were done. I pulled them at 155 internal.

Plated with some yellow Spanish rice and canned Mexicorn.

The Magic did its thing again! Ribs were very flavorful, tender and moist. Great dinner tonight!
In retrospect if I would have thought about this yesterday I would have vacuum sealed the ribs
and Magic and let them marinate overnight. I will be doing it that way the next time.
