Can I make this in these little spring pans? How can I tell when done, the toothpick thing? And how high should I fill the spring-pan?

Thanks Bigg.

Yes you can make these in the lil springform pans..only fill a lil over half way and do the toothpick test or over 200º on the thermapen. or just use a  thermapen to see of they are done..adjust times, these won't take near as long. I just put them on a cookies sheet evenly spaced apart. Makes great cupcakes too.  Enjoy.  Pam   .☆´¯`•.¸¸. ི♥ྀ.

Pam Nailed it.
At twenty minute mark turn your oven light on and peep through the oven glass. If they show signs of "a rise" do a toothpick test.
Make sure your oven is thoroughly heated.

And...look for a product that is a "Pam" like spray - but has the flour in it.... I think it is called "Baker's Friend"? under one name brand. Alternatively - you can cut parchment paper to line the pans with.
Just makes for easier release - prettier product.

Another helpful hint: I broke a pizza stone years ago..cracked in half..I put it in the bottom of the oven to keep the heat level even after I open the door..works great, so I keep it there. Like a heat sink thingi.  Pam   .☆´¯`•.¸¸. ི♥ྀ.

Yes that is a GREAT trick to wake up any chocolate dessert; brownies, cakes, etc. I do that even for homemade chocolate icing.

Thanks for sharing the recipe!
