Fresh Chinook Salmon on the DC

One of the other Camp Hosts caught an 18 lb King (Chinook) Salmon and generously shared a couple hunks with us.  Have yet to catch my own Salmon but not for lack of trying.  I'll get one soon!



Lightly seasoned with salt, pepper, granulated garlic, and old bay.  Wanted to let the Salmon speak for itself.



Hot smoked at 180ºF for an hour and then bumped the temp to 225ºF until the IT reached 145ºF.



Came out fantastic ... can't wait to catch my own!  A King and/or Silver Salmon a week is all I ask!!  :D ;D

It really did Mike.  I've had and cooked lots of salmon in many different ways but none have compared to the taste of these.  Going to continue plugging this morning for my own Chinook - I figure a salmon a week will be just fine for now ... if I can get some.

Gave one of the chunks of salmon to another camp host for a taste and Hors d'oeuvre and his wife said she doesn't like salmon.  He loved it and asked her to try it ... She loved it too and said "Now this I can eat"  8)

That fresh salmon looks fantastic. 

I remember back in the middle 50's my Dad was stationed in Monterey going to the Navy Post Grad school.  My Mom and Dad participated in a salmon derby they were having.  He had previously qualified by catching a 47 pounder.  They were back in before 9:00 with the fog still nice and thick.  The dock workers wanted to know if my Mother had gotten sea-sick.  She proudly announced that "No, I am not sea-sick.  We have our fish already!"  First fish in.  52 pounds!!  Had to wait all day to see if anyone would top it.  No one did.  My Dad won a small Mercury motor and a bunch of fishing gear for first prize.  Somewhere in my photo files is a picture of my Dad holding this salmon, barely off the ground.  It came up to his chin.  The really sad news was that when it was being cut up, none of the neighbors wanted any!  Free fresh salmon and no one wanted any.  I remember eating salmon often after that.

I'm glad this was reposted today.  I'm not that good at salmon cookin'.  My oldest daughter loves it and I've been messin' up some pretty good salmon trying to do a good job for her.  I like this simple easy recipe.  Thanks, Pete.

I can do a pretty good job with blackened salmon though.  I cooked some tuna steaks the other day I got from Costco and after eating it grilled Carole told me how much she like the blackened tuna she had on a trip she took.  Wish she  told me before I grilled semi-good $25 worth of tuna.
