Dry Aged Brisket

Well today is the day to take the brisket out of the UMAi dry bag. Its been 29 days now.




Now time to trim some.



After trim i lost 1 1/4lb.....and a big Holy penguin batman  :D That sure do look good.



Now for some rub, a wrap and fridge for smoking tomorrow.

Was pretty beefy aged smell to it.

Already drooling!   HURRY UP!   The suspense is killing me!   Not sure--read no way in hell--I would wait this long, AND still have to smoke the bugger!

I know what that's like, we just went through 2 days of rain here in Salt Lake City, kind of difficult to get out of the RV to do anything outside.  Good thing the beer fridge is adequately stocked though.  :P
