Zucchini Cakes

Recipe on the food network under Sandra Lee - saw it this morning and my wife just had to try them.  They were good dipped in the crab bisque

Developed nice color


Crisp on the outside, and moist inside


In preparation, my wife had to squeeze out the excess juice from the zucchini and was about to throw it away - I suggested we make it the basis of a Martini - was quite tasty, almost like a cucumber Martini. Skewers were simple: pimento stuffed olives and home pickled garlic

Thanks gents, we like cucumber martinis so the step to zucchini was not too large. Next time we'll peel the zucchinis first to give it a lighter flavor. We like the delicate hint of flavor it provides.

The cakes were good but slightly bland so even though the recipe doesn't call for it, green onion and panko crust.

My wife said she used about 1/3 cup for two martinis, but in retrospect, I think a little less would have been better for a more subtle flavor

These look good.  I have a zucchini fritters with Avocado Creama recipe I've wanted to try but have not got around to it  yet.  One of the things I think will add to the fitter would be the  Creama:

1 avocado pitted and peeled
1/2 cup coconut milk
1 T fresh lemon juice
1 tsp salt

Blend in blender and top on fritters.  Additionally, you can add more topping of cherry tomatoes 1/4's and sliced green onions.

The recipe I have uses almond flour and golden flax meal which I have neither of  for the fritters.
