Going to give this a try today, any hints will be most welcomed ;D

My last pack from the freezer


Packed by Maple Leaf, Canadians should be able,to find these at there local butcher shop


Used two rubs

Racks on the bottom, MAC set @ 225F
Parts on top


The hot spot on my MAC is the back right hand side, so the thicker part of the rack is on that side

Ok here they are off the smoker


Here is my verdict,
I kept trying to determine when the ribs were cooked by checking the bend until I seen a the meat start to crack. I also kept checking the bones to see if they were coming loser, really they did not. They meat was dry not moist at all.

For now I'm going to study more and stick with foiling :(

Did you add any moisture while cooking, like basting with apple juice or a pan of liquid inside your cooker?
