Monkfish, tiger prawns and scallops

Yesterday I made some seafood: monkfish fillets, tiger prawns, shrimps, scallops and as sides saffron risotto and saltwort. Silent movie time:















Scallop topped with lumpfish caviar, saltwort and a tiger prawn in the background:

Too pretty to eat.  Is that a salt block you have the scallops on?  If so, please tell more about how to use it on a grill.  If ain't, please tell me what it is.  Thanks, Dee

Is that a salt block you have the scallops on?
Yes, that's a salt block. Start your grill and place the salt block upon the grates (don't put it on a hot grill to avoid cracks). When it is heated, place the meat/fish/seafood on the salt block. I always toss some oil soaked herbs on the blocks surface, before placing the food on it.
