Nailed it! I  will definitely try the teriyaki!   We just did a real simple brown sugar and salt brine on the ones I gave you-- sorry I didn't have the time to chat more on Monday, was trying not to be late for my lunch date!  :) 

The stuff I did turned out a little dry, so we ended up turning it into a nice cream cheese smoked fish dip, which was killer.   I skipped the drying phase to let the pellicle form, so that might have contributed to it being a bit drier than it should have been.

Looks like we all will have to give this smoked tuna recipe a try.  Have had plenty of smoked salmon before, smoked tuna looks good too.  ;)

The texture was very similar to the salmon that I have smoked on the DC using this technique pz.  I would say that the salmon turns out a bit more moist but that's probably cause it has more natural oil.

I was wondering because tuna is typically so lean and relatively easily dries.  However, it does look like your marinade minimized the moisture loss because it is not too different from salmon!

Definitely something I would like to try because tuna steaks are one of my favorites - usually so smooth they melt in your mouth
