Nailed it! I will definitely try the teriyaki! We just did a real simple brown sugar and salt brine on the ones I gave you-- sorry I didn't have the time to chat more on Monday, was trying not to be late for my lunch date!
The stuff I did turned out a little dry, so we ended up turning it into a nice cream cheese smoked fish dip, which was killer. I skipped the drying phase to let the pellicle form, so that might have contributed to it being a bit drier than it should have been.
