So I was in the refrigerator looking for a beer when I ran into vacuum sealed leftover ribs.
My mind started racing, then I came across pineapple chunks and that's when it clicked. I'll try shredded ribs and pineapple fried rice.
So I shredded the rib meat.
Sliced some onions
Diced some fresh ginger
Chop some garlic
Cut up some green onions
Matchsticked some carrots
Cast iron skillet, heat, quickly sautee the rib meat
Put it away
Sautee onions and carrots until soft. Add ginger and garlic, cook for about a minute.
Add cold rice, crank heat up. Cook until well heated, lower heat, add the meat back, add some peas and pineapple chunks, mix all that mess, add some soy sauce, taste for seasoning and plate. Squeeze some fresh lemon juice and enjoy.
