Salmon Success - Sprouts Fail

I've never cooked brussel sprouts before.  I like them, but I usually eat the frozen in butter sauce variety.  But my bother0in-law has started cooking them, and I don;t want to be outdone . . .

Anyway, I was planning to do some salmon last nioght and thought I'd give it a whirl.  I basically followed this recipe from Alton Brown.  For the salmon, I used my tried and true olive oil, fresh squeezed lemon, salt, & pepper.









The salmon came out just how I like it, in between medium and mid-rare.  The sprouts, on the other hand, were dry and not that tasty, even after an additional splash with some EVOO.

Oh well, back to the drawing board.

I'll take all the salmon you can throw at me.  You can keep those sprouts unless they are covered in enough oil and batter that I can't tell what is inside.  :D

minutes to soften them some,  then coat them with EVOO and I use Adobo seasoning with them. I will then skewer them and put them
on the grill until done. They usually turn out flavorful with just a bit of crunch.

That sounds like a great idea on the sprouts, will have to try that.  ;)

Try doing your sprouts in a small foil pan coated with olive oil and if you're cooking a meat that cooks quickly start them first because they take longer to cook. It's also real good with some bacon cut up in it, then add some onion chunks when they are almost done.

Salmon looks great, for the sprouts I would do like HOS. You can overcook them too, after nuking I would just grill until browned. Don

They both look great, even if the sprouts didn't turn out as good.

Like Mike (HighOnSmoke), we usually steam the sprouts for just a bit first (usually in the microwave), then put 'em on skewers and on the grill will some olive oil, salt, pepper & garlic. They turn out nice and tender and I love the crispy browned parts that you get from grilling them. YUM!

I agree with Saber on the bacon. Bacon and brussel sprouts just belong together! A bit of balsamic is nice too!

I agree with Saber on the bacon. Bacon and brussel sprouts just belong together! A bit of balsamic is nice too!

Ah yes, I forgot the balsamic, it is a nice finishing touch.

That is basically Alton's procedure, just different spices.  Mine were just very dry.

I did another batch in the oven Sunday with bacon and mushrooms.  Finished them off with some balsamic.  Much better!!
