Question about liquid smoke

Is it a good idea to add liquid smoke to the the steak/roast before vac sealing and cooking it sous vide or would the liquid smoke over power the meat over time?

Because nothing can evaporate from the bag - I would use extreme caution. Use much less than you would typically use.

Roaming the the web and reading some good info I would have to say the train of thought was to add smoked spices such as smoked salt, smoked paprika or some thing along that line rather than liquid smoke. Some recipes I came across only used 1-2 drops. Think I will stay away from the liquid smoke.

As potent as that stuff is I can see why they would use very little or something else. ;)

I have never tried the liquid smoke with SV but can tell you that regular cold smoked foods get a boost in smoke flavor when cooked SV so I would imagine very little liquid smoke would be needed.

PAM don't have a smoke gun. I have cold smoke meats before bagging however.

Liquid smoke is hard to deal with and I never use it.  I'm not into SV cooking, but would suggest the "reverse sear" method adaptation if you can.  Lightly smoke the meat in real smoke for a few minutes before wrapping.  It won't cook but it will warm up.  Real, natural smoke always tastes a lot better than the bottled kind.

Pam, I did a search and could not find anything related to a smoke gun. Maybe what you are thinking about is what you crazy kids that grew up in the 60's called a shotgun.  ??? ;D
