After seeing Wendy and Smoke's PP omelet yesterday, I wanted one of my own! Luckily I had a pkg. of PP using Tim's Award Winning recipe in the freezer.
Here's the players;
5-6 eggs, whisked
3 cloves garlic, minced
1/2 sm. red onion, finely diced
1 jalapeno, diced
S&P to taste
1 C. shredded cheese, Smoke recommended Mexican but I had marbled cheddar
8 oz. pulled pork, warmed
After whisking the eggs I added the garlic, onion, jalapeno, and S&P and mixed well. This got dumped into a lightly oiled non-stick pan. When about 3/4 done the cheese and warmed pulled pork were added, omelet folded, cooked for a few more moments and breakfast is served!
