Baked Jalapeno Bacon Dip

 (Edited December 6, 2014) I posted a basic recipe for this a few weeks ago, but yesterday I actually "fixed" it -- meaning I both made it and repaired some flaws in the original to improve results.  The recipe author is Tanya Thompson, a food blogger.

Jalapeno Popper and Bacon Dip

Ingredients
•2  8 oz cream cheese
•2  cups cheddar cheese shredded
•2  cups mozzarella cheese shredded
•1 package Hidden Valley Ranch Dressing mix (1 oz. size)
•6 jalapeno peppers, seeded, de-veined and diced
3  2.8 oz. packages Hormel large size bacon bits
 •4  cups sour cream
•4 tbsp chopped onions
•2 tbsp parsley


Instructions
 1.In a large bowl, mix all the ingredients together, until well blended.  (leave the cream cheese out to soften for several hours or you'll need a commercial mixer to do this job)
 2.Spread on the bottom of a 13×9 baking dish
 3.Bake in the oven at 350 for 30 minutes or until edges are golden brown.
4.  Allow to cool slightly before serving with crackers or tortilla chips

If you want to cook up and crumble your own smoky bacon, that will add extra zing.  Also, there's no pepper heat in this so if you want more, either don't de-vein the jalapenos or consider a hot sauce addition after the cook (so as not to make it too thin or runny).

Well, since I'm fat already and not likely to get thin anytime soon, I guess I'll bite the bullet and try it out (if I can use our Serranos instead of jalapenos).

That party would be mine.  Mr. and Mrs Hub, and Mr. and Mrs. Tee were in attendance, along with 60 or so neighbors.  Our annual Christmas party that my wife and I have been hosting for over 40 years.  Without a doubt, Hub's Baked Jalapeño Bacon Dip was a hit.  I was so busy that I didn't get to taste it until real late.  But when I did, I was bowled over with the great flavor.  Other than a straight dip for a party, I have another use in mind.  It will be my filling for an omelet this morning.  That just moved up my list of appetizers to the top!  Thanks for bringing the Baked Jalapeño Bacon Dip, Gordon.

Boys and girls.....my being native to Texas and the western edge of Louisiana.....THIS was a "memory" food that just blew me away. I absolutely love it and will be making it for New Year's Eve.
