Sweet Potato Casserole with Pecan Topping

Here is the recipe I promised.  It is really like eating candy.

Recipe By: Diana Rattray (http://southernfood.about.com/od/sidedishcasseroles/r/bl90911u.htm)
Serving Size: 8

Ingredients:

3 cups mashed sweet potatoes
1 cup brown sugar
2 eggs, lightly beaten
1 teaspoon vanilla
1/2 cup milk
1/2 cup melted butter
TOPPING:
1/2 cup brown sugar
1/3 cup flour
1/3 cup melted butter
1 cup chopped pecans

Directions:

1. Combine first 6 ingredients.

2. Blend thoroughly and pour into a buttered 1 1/2 to 2-quart casserole dish.

3. Mix remaining ingredients together and sprinkle over top.

4. Bake at 350° for 30 to 40 minutes, until hot and browned.

This is a really good recipe.  If you haven't made sweet potatoes this way you need to try it!


It's very similar to what I use, and what I like about it is:

1) The pecan topping is excellent! So much better than marshmallows.

2) This recipe is easy to adjust to your own taste!

- I don't like it as sweet, so I only add a few Tablespoons of brown sugar, so it's less desert like.

- I like to add half a package of cream cheese, instead of the milk - YUM!

I make this recipe with the Splenda brown sugar..it has the half brown sugar and real sugar. That helps a lot. And still tastes good,. Pam .☆´¯`•.¸¸. ི♥ྀ.
