Homemade noodles

I just read an old post that Tee asked for my secret recipe for homemade noodles. Well, here it is.
4 warm eggs, I let sit out overnight
3.5 cups flour, whatever kind you like or a combo
pinch salt
1 tablespoon of oil, not Olive Oil -optional
mix all together in KitchenAid or by hand. Roll thin and stack with flour between layers, then cut with pizza cutter or use KitchenAid cutters. Very easy and fast, and you can't beat the flavor. Cooks very fast if fresh or you can dry them with some flour to keep them from sticking. When dry put in ziploc bag and in freezer.
You can add spinach or beets or anything, just puree first and add some more flour.

Thanks, Pam - bookmarked. My family loves home made noodles - I used to hand knead and use my hand cranked Atlas roller / cutter and I was cranky. Finally gave myself permission to use the Kitchen Aid and a knife - rustic cut. Much faster and easier. But, I have never left the eggs out to warm. What is the advantage of that? I am always looking for a way to make the noodles better.

Do you find there is too much egg flavor when you make them? Or when you say noodles you are going for egg noodles?

Akrus..I like egg noodles..you can make them with whites also, but I like the flavor and have just always made them like this.
David..it makes it come together easier. I beat them up and then add them. Warm works for most things in baking. Warm also helps with the rolling, like warming the dies if you use them too.  I use my KitchenAid noodle cutter..so much faster and I like the bigger noodles for chicken or beef a nd noodles..we like them thick too, none of this thin, wimpy stuff. They come out like fettucine or the little noodles like for soups. I made real fettucine the other day with the thick noodles..Heaven on a plate.

I haven't tried whites, I have tried half egg half water and it seems to be ok, but I am missing some pop.  Could be I need some more salt or some extra fat lost in the subbing of water in place of the eggs.  Thanks for the recipe!

you can use just whites or egg beater substitute..add another pinch of salt if you think of it. I think the whole egg recipe is the best. Personal preference.  Pam  .☆´¯`•.¸¸. ི♥ྀ.

Thanks Pam! A great cold weather recipe to have on hand.

My wife likes noodles with olive oil, parmesan and some black pepper.
BBQ is neither verb or noun. It is an experience.

Even I can make noodles.  BUT, just use the yolks.   I think it gives them a richer, deeper flavor.   That's the way my grandmother made them, my wife makes them, and I'm too damn old to change.   The Kitchen Aid mixer AND pasta roller does make it much easier, though.
