Even I can make noodles.  BUT, just use the yolks.   I think it gives them a richer, deeper flavor.   That's the way my grandmother made them, my wife makes them, and I'm too damn old to change.   The Kitchen Aid mixer AND pasta roller does make it much easier, though.
I like egg noodles too. I have the twins and pasta rollers, but got a new attachment..a pasta press..a lot easier..make lil dough balls and then put them in the press and it does all the work, lots of different shapes too. I love my KitchenAid kitchen and think I can make almost anything. Did I mention I like to bake and cook and grill and smoke. geez 
 I also like to make flavored pastas and chopped herb pastas.  Pam  .☆´¯`•.¸¸. ི♥ྀ.
