Sous Vide Egg Yolk on Fried Rice

I know.... more eggs...  ::) ::) But, I only have two more immediate ideas, I promise...  ::) ::) ;) ;D

I had some reserved fried rice from dinner last night, and was trying to think about an interesting late breakfast. How about a nice runny egg on top? Even better how about just the runny yolk?

Really easy - warm up the rice (actually it wasn't all that well done last night, so I refried it.) Eggs, in the shell, in the spa at 75*C for 14 minutes. Ran them under a very slow stream of lukewarm water as I cracked the shell and let them fall in my hand. Carefully used the water to remove the whites as I let the yolk go from hand to hand. I was surprised at how resilient the yolk is.

Then dropped it on the rice. The first one looked so good, I decided three would be better. Oh boy they were so creamy, velvety, however you can describe them - they were perfect on that rice. A couple squeezes of lemon juice. Just added the little bit more in softness and egg flavor...  :P

Good eye! You are right.

I prefer homemade vs. take out to get tender juicy chicken (and just the right tender crisp on the onion and any other veg...)

BTW, Pappy - that is my first De Buyer's pan - a bit over 6 years old. One of my favorites, especially when I am cooking alone. Not Teflon, but pretty slippery. I scrub it with a brush and hot water after cooking. It is pretty darn black.

I keep explaining this stuff to the girls - what goes in the dishwasher, what you wash by hand what is just a brush and hot water. They roll their eyes, I pick them up and roll them back (another post...  ;D ;))

But they are beginning to learn. I just hope they do in time to appreciate some of the junk I have hoarded er accumulated...  ;D ;D ;D ;D ;D

Who can resist a perfectly cooked, creamy, runny egg yolk?  And served over homemade fried rice?  That is just off the charts good.
