Scalloped Ham & Potato Casserole

Sunday after I sliced the ham we'd just smoked overnight, I call Mrs. TentHunteR at work to tell her how good it turned out.  By now the weather was pretty nasty and she was looking forward to coming home and having some of the ham for supper.  I said I'd been thinking about some scalloped potatoes with ham, to which she replied, "Ooh that sounds good. What do I need to pick up before I leave work?"    I asked her to pick up some more taters, Sharp Cheddar & Monty Jack cheeses, and sour cream. We had everything else.

When she got home she wanted to cook.. No problem, I took a nap!  By time it was ready, the whole house smelled so good, and NO JOKE this was some of the BEST scalloped potatoes I have ever put in my mouth!



Now keep in mind when she cooks something like this, she doesn't measure, so these amounts are approximate (adjust how you see fit):

About 4 lbs potatoes washed & sliced (but not peeled)
About 4 cups Ham cut into bite-sized pieces
1 lb (16 oz.) Sharp Cheddar Cheese shredded
1/2 lb (8 oz.) Monterey Jack Cheese shredded
2 cups Sour Cream
1 Cup Milk
Black Pepper to taste (there is plenty of salt in the ham & cheese already)

Mix the Milk & Sour Cream together.   In a casserole dish layer the potatoes, Ham & cheese, pouring some of the sour cream/milk mixture over each layer.  Bake covered in a 400° oven for about 45 minutes, uncover and bake an additional 30 - 45 minutes until potatoes are tender and topped is browned.

Most excellent looking! I have a problem with my sauce always separating. Doesn't effect taste, but doesn't look awesome
