Jaxon's challenge + Chuckie

Shortly after arriving in Riyadh I received somewhat of a challenge from Jaxon to do wings in the Tub then deep fry.  My trip was delayed 5 days due to the King passing but made it back and took the challenge with a twist plus started a 50-hour chuck roast.
I coated the wings in Chipotle Olive Oil and Weber's Kickn' Chicken, vacuum sealed and in the fridge for 24 hours and at the same time I coated a Chuck Roast in regular live Oil and covered in KC Cow Town's All-purpose rub.  I put the wings in the tub at 160F for 4 hours then took out and drained off excess oil and covered in KC Cow Towns "Night of the Living BBQ" (hot) sauce, then on the REC TEC for 30 mins at 375 to set the sauce and crisp the skin.  The result was fantastic, nice moist meat, thoroughly cooked.  Wife and Daughter both agreed they were the bomb.  I highly recommend this approach regardless of seasonings and sauces.  Will let you all know how the Chuckie turns out...

When I did the wings sous vide + grill time, the texture was terrific.  The skin was tight, but the meat was tender and juicy.  I had a mild seasoning on mine sense I don't do heat.
Let's me know I can do plenty in the bath if it's large enough...cook some now - cook some later.
