50-Hour Chuckie

I bought a Chuck Roast and seasoned with Olive Oil, Cow Town all-purpose rub and Penzey's 4S Smoked Salt.  Vacuum sealed and in the fridge for 24-hours.  Then into the tub at 135F for 50 hours.  I took it out of the tub and into the fridge for a couple of hours and then on the Genesis with Grill Grates for a abut 2 mins on a side.  The result was beyond description.  My wife said had I not told her differently she would have thought it was the best prime rib she had ever eaten.  The only thing I would do different next time is skip the fridge after the tub as the meat was not as warm as I would like it.  Sorry for the presentation (gave myself a 2) but 9's for the taste and tenderness.

That's the nice thing about sous vide, you set it and forget it while cooking other meals during the 50 hour swim in the hot tub. ;)
