SWMBO made a batch of basil pesto  the other day and it must be somebody's birthday so I decided to make Guy Fieri's Birthday Pork Roast.  In the oven this time - if it works out I may go to the grill for the next iteration.

Started with the pork roast (brined) and did the butterfly thing, then stuffed with the pesto, garlic, and red pepper flakes. 

 

Tied it up and set it over a bed of onions, carrots, potatoes, and garlic and threw it in the oven.



Came out looking good at 145o IT.



Sliced and plated with some pan sauce. 



Mmmm good - definitely a keeper.

It's his son Hunter's 16th birthday..a milestone for kids..I just know there is a hotrod in the bunch of presents he got. But that sounds like a keeper recipe to me and I have tons of basil growing..might have to use some of it up. thanks for the recipe.  Pam .☆´¯`•.¸¸. ི♥ྀ.

Lookin' good!!!  I like the idea of butterflying and stuffing the roast.  So many good ideas and so little time (or money) to try them all.  Besides, I am trying to lose some weight, not gain it.
