That's the question I had when I saw the pork chop dinner DRHolly cooked for the girls.  I had a slight variation from his recipe, but it turned out pretty good.  I started by seasoning the chop with salt only, then seared in a little canola oil, then bagged and placed in the bath at 144 per his recommendation.  Let it go for about 80 minutes...for Dee, that would be an hour and 20 minutes.
Pulled out some HoneyGold small potatoes and quartered 'em before boiling to fork tender - about 20 minutes.  Whilst they were cooking, I whipped together some whole milk and cream cheese with garden vegetables (packaged like that).  That was the sauce I spooned over the potatoes at serving time.
The Corn was just standard issue microwave-in-bag variety that worked.  Added butter at serving time.
When I pulled the chop from the bag, I seared it again and it colored up nicely.
The texture and flavor seemed to be just right to me and the sear added that extra layer of flavor that we all like.
All in all it turned out to be a nice evening meal (we call it supper) that didn't require too much work.
Now let me see if I can do as well with the pics...

The pictures are excellent, Jaxon. And the meal looks fantastic as well!

I wonder if there is more flavor with a bone in vs. boneless chop? I also wonder if more flavor is extracted from the bone if allowed to swim a bit longer...? So many things to try - I love it! I found some chicken breasts - bone in / skin on for only $1.29/# tonight - will be trying them soon.

My only worry about your supper, when Hub stops by, might be a bit shy on the GRAVY...  ;) ;D

Jack you can get a great sear on thinner chops with a torch. That way you get great color and don't overcook them.

They look great to me!

My oldest daughter loves to play with the torch (her favorite is crème brule.) I'm thinking I might need to get stone counter tops...  ???

I didn't mention this...but...I bagged three chops this evening...ate only one.
Deb is playing BUNCO tonite so her's is for later.

I am experimenting with the two by keeping them in the bath at 144 for another 2 1/2 hours to see what it does for 'em.  If they are like me, they will be nice and relaxed when they come out of the hot tub.

I believe David asked that question, didn't he.."would a longer bath extracting more flavornoids?"

Cut it out...my eyes are as good as yours.  I have to use the lowest quality setting on my camera to get down to the allowed size here on the forum.  I don't know how some of these other guys get away with it.  Their's are the "pro" shots.

Jack if you post process your photos in Picasa or Adobe Elements there is an option to make your photos smaller.  I am no expert but I shoot mine at full 16 Mb and reduce
them in Lightroom 4.

Perfect Jaxon..ya did real good..love the torch too..I will drive them nuts at the lake with a torch, can't wait. I use screaming hot cast iron in the winter. And an exhaust fan, I set off the smoke alarm regular now. The fire dept hasn't showed up yet tho.  Pam .☆´¯`•.¸¸. ི♥ྀ.
