Perfect Jaxon..ya did real good..love the torch too..I will drive them nuts at the lake with a torch, can't wait. I use screaming hot cast iron in the winter. And an exhaust fan, I set off the smoke alarm regular now. The fire dept hasn't showed up yet tho.  Pam .☆´¯`•.¸¸. ི♥ྀ.

I unhook my smoke alarm when I start to sear in the CI pan...  ;) ;D ;D
You can't catch a fish if you don't get a line wet...

I gave up on searing with a torch.  It's too much like painting with a tiny brush; not worth the time to me.  Like Pam, I sear in a blazing hot CI skillet for a minute each side.

Yeah, I agree...PLUS I have to do each one separately which takes much more time.   Pan searing seems to work best for us in most situations.
