I was supposed to be cooking ribs today to demonstrate my process for Contest Ribs for my son-in-law, who wants to take them over this year when we compete. But, what with the new grand-kid coming on Wednesday and the nursery not being finished, my daughter put the k-bosh on the cookout.
So, since I already had gone by Restaurant Depot to pick up some of their St. Louis cuts anyway, I figured I’d go ahead and fix ‘em for the folks.
I followed my basic competition procedure and rubbed the ribs right before getting the fire going in Fat Boy.
I put them on at 3:00. Every thirty minutes I spritzed them a little apple juice. At about 5:00, I flipped them over.
At 6:00 I pulled them off to wrap with foil, adding some butter, honey, and brown sugar.
Normally I would have placed them right back on the fire, but I was headed over to feed the folks. So they went into the hot box.
I got to my folks at about 7:00 and put them in the oven, still wrapped, for an hour. At 8:00 the foil came off and the sauce went on, for another hour.
Yes, we regularly eat dinner at 9:00 on the weekends ! ! !
