Made one of the wife's favorites - U15 shrimp with peppers, snow peas, and Florida onion in a Thai spice sauce with Thai basil and cilantro. I fry the shells from shrimp in oil and add a little chicken stock to get flavor out. I do the peppers and onion in a little roasted chili paste, oil, garlic and fresh grated ginger. Remove to platter when 3/4 done. Add a little oil, garlic and ginger and red curry paste. Toss in shrimp and snow peas. Get them almost done, added the shrimp stock and a little chicken stock if needed, thicken with a little cornstarch, add other veggies, fish sauce, a little mushroom soy, and bunch of chopped Thai basil and cilantro. Toss it all around and let it sit for 2 - 3 mins to get flavor some basil into dish. Serve with Jasmine rice.
As a side - not needed but - I made a cold sesame rice noodle salad with cucumber, peppers, onion, snow peas (OK, repetitive veggies) bean sprouts. Lightly sauteed the peppers, onion and snow peas in a little oil with chopped garlic, fresh ginger, and roasted chili paste. Removed from heat. Added a little peanut butter in there and Sriracha, Thai fish sauce, chopped cilantro tossed in with noodles and threw it all in the freezer to get temps down to a chill..
Decent dinner.
