Art's Sous Vide Corned Beef

I finally found a 3+ pound corned beef point cut at Wally World the other day.  It was the last one, too.  I wanted to try this one SV style.  I simply repackaged the CB with the spice pack emptied into the bag.  Double sealed and into the pool at 135 for 30 hours.  I used my ham knife to slice some fairly uniform pieces for dinner tonight. 



The flavor and texture were spot-on, IMHO.  I used a butter knife to cut my slices into bite-size pieces.  Served with some whole potatoes in melted butter and some cole slaw.  Nothing more needed.



This will be my go-to approach for corned beef in the future.  I highly recommend you trying this one.

Art, how was the salt level?  Did you soak it at all before resealing it?

Outstanding post and great timing.  Exactly what I needed to know for sous-vide cooking time & temp!

Great job Art,we have another in right now,going for 48 hours,went in frozen.

SV just nails these corned beefs.I loaded up on more yesterday,Staters bros didnt have many left.
