Spoiler Alert - a unicorn jumped in front of my camera as I tried to document this cook. Never happened before, but the SD card failed - no pics. However, the meal was good enough to warrant doing again - so I will in the next couple of days and I have a new SD card.

I had a thick cut boneless, center cut chop. Coated with oil and dusted with FSB (Fine Swine & Bovine.) Gave it a quick pre-sear on all sides. Sealed and dropped into the Anova inspired spa at 140* for 2 hours. In the meantime, I pre-heated the oven and prepared some veg for roasting.

Peeled and thin sliced (like fries) a sweet potato, cut up some small red, white and purple potatoes, a small white onion, trimmed some asparagus and cut some carrots into quarters lengthwise. Rolled in olive oil and added some kosher salt and fresh cracked black pepper. Tossed in the oven at 400* for about an hour.

When the chop came out of the spa I gave it another quick sear on all sides (it WAS thick!)



Sorry, HUB - no gravy. But it WAS good. Will be making this again soon and will put up the unicorn guard to be sure I get some pictures.

Went to PETCO last night = no Unicorn leashes...  :( :( Or they MAY have been invisible... mmm... just sayin...

But did find some good treats for Roscoe!  ;D ;D ;D

muebe - literally tens of thousands of pictures take over the years - never a problem. This IS an older card but the first time an SD card failed - amazed me. Dang unicorns!

OK - I promised an update and here it is.

Found some center cut loin chops - very thick - at least 1 1/2 inches or more (forgot to measure...) Seasoned with FS&B and some olive oil and pre-seared in a screaming hot cast iron pan. While they cooled a bit I chopped some veg - sweet potatoes, a mix of white, red and purple potatoes, carrots, asparagus and onions. Tossed with olive oil and S&P.

Put the chops into bags and added a bit of oil and some more FS&B. Sealed and dropped into the 140* spa. Going to let them go for 2 hours plus or minus.

At about 1:45 I put the veg in the oven at 400* After 20 minutes I tossed them and checked the carrots - still pretty "raw".

Another 30 minutes the veg had a nice char and all were just right to the bite. Pulled the pork and gave it another quick sear on each (6) side. Cut and plated over the veg. The whole thing was excellent. I think I would reduce the pre-sear a bit next time - but the chops were still very moist and juicy.

For Hub, I made some pan gravy - was a great addition.

LOL - yeah got kinda carried away with the veg chopping. But actually had some potatoes and other vegetables that needed to be used (and I like playing with my knives  ;) :D :D), and I do like roasted / charred veg, so it worked out ok.
