Smoked and fried chicken wings

My favorite way to do chicken wings. I buy bulk wings from Sam's Club, little easier than trimming my own and about the same price in bulk as whole wings.

I let my wings soak in a buttermilk brine over night. Usually throw in some salt,pepper, garlic and onion powder. Stir well and place brine in fridge over night.

Wipe off any excess milk and onto the Traeger at 225 for 40 minutes.


Pull wings off after 40 minutes all we're doing here is getting some wonderful smoke flavor.

Then into the FryDaddy at 350 degrees for 4 minutes.


And add your favorite dry rub or sauce while they're still hot. Today it's Buffalo Wild Wings Salt n Vinegar rub and also some Grippos rub!


They don't last long!!

I've just found that the buttermilk makes the wings so much more moist when soaked overnight. If I'm only doing one flavor of wings for the family, then I'll take a tablespoon or 2 of the dry rub I'm going to use on the wings and mix it in with the buttermilk.  If the kids can't decide what flavor they want, I just mix in salt, pepper and garlic into the milk.
