Candied-Pee-Cans

Candied Pee-Cans

What you'll need:
3 C. pecan halves
1/4 t. onion powder
1/4 t. garlic powder
1/4 t. cayenne pepper
1 t. hot sauce
1/4 t. cumin powder
1 t. kosher salt
1 T. worcestershire sauce
1/2 t. smoked paprika
1/2 t. Spanish paprika (or sweet paprika)
1 T. ancho chili powder
1/2 C. turbinado sugar (dark brown)
2 egg whites, beaten to soft peaks

What you'll need to do:

Preheat oven to 325 degrees. (you can cold smoked after)
Place all ingredients in a large mixing bowl & toss, using a wooden spoon.
Spread the pecans evenly on a large baking sheet lined with parchment paper.
Bake for 6 min's. remove pan from oven and stir pecans.
Return to oven and bake until thoroughly dried and toasted, about 18 more min's.
Check every 5 min's or so to make sure they aren't burning.
Allow to cool.

Around these here parts we pronounce it "Pee cahns," thank you.   For obvious reasons, as far as I'm concerned.  We have a HUGE Pecahn tree in our backyard that keeps us supplied, as well as kids and grandkids.    LOTS of super pecahns every year.   They are such a big thing here we have places shell them for a fee.   Sure beats having to shell them myself!
