Some Thick Pork Chops

Stopped by my favorite grocery store - they are very good about custom cuts - but no 2 bone in chops tonight. But they did cut some 2" thick chops for me. Sweet!

Put some oil in the bags and rubbed he chops with FS&B - I know I use it a lot - why? - It tastes good! Put them the spa at 144* and let them swim for about 2 hours.

Meanwhile I chopped some of my favorite veggies and prepped to roast - carrots, asparagus, celery, tomatoes, potatoes, onions, and garlic. set oven for 450* and put them in about 1 hour before the chops were ready.

When the chops came out I seared them on all sides in my favorite cast iron pan. Just a couple of minutes - just a sear no real cooking time.

Dinner for Rocky and her BF Zach - they enjoyed it so that's what really counts. But actually, I really like it too!
