Sous Vide Elk Round Steak

Art (ACW3) was gracious enough to share some of his elk with me. I marinated the round steak overnight in zesty
Italian dressing.  It was then bagged, sealed and put in a 135 degree bath for 6 hours.

Here it is after a 1 minute per side sear in my cast iron griddle pan.


Elk was served with boxed pasta and corn.


Very delicious and for tender. I wasn’t really sure how to cook this since I know that beef round steak is fairly
tough. I believe this was the correct call to do it Sous Vide.  My wife and I both said it came out delicious.
