I asked my daughters what they were planning for dinner tonight.. they said cod. I asked how they were planning to make it... they said - "You are!" So, I went to the store and picked up some cod - shame on me, I should have smelled it BEFORE I brought it home... whoa, smelled like a whole fish market on a hot summer afternoon!

So, back to a different store for salmon (no cod available.) Smelled like the ocean - there we go.

A simple salt & brown sugar brine for about 30 minutes. Then into the spa at 130 for about 40 minutes. Same time I had some asparagus, carrots, onions, tomatoes, and mixed small potatoes, and lemons in olive oil with some sea salt, pepper, and a little Old Bay. Let them roast for about 45 minutes at 450, then squeezed the roasted lemons over the veg.

Pulled the salmon and used the cast iron skillet from the vegetables to crisp the skin for a minute or two - gave a sprinkle of Old Bay and a squeeze of fresh lemon and served.

I thought dinner was going to be for me and my daughters (Karen is at the lake) but the boyfriends and best friends showed up as well. It was fun, but please excuse the rather sloppy plating - between the dog and half a dozen teenagers, I was a bit distracted.

A great Father's Day dinner - loved it!

The final result looks fantastic.  Glad your "back-up" plan worked. 

I have trouble believing that the people selling products like fish try to sell you bad fish.  Someone needs to explain to them the lawsuit they would face if you got sick, or worse.

I think they are either oblivious to what they are doing, or they count on people (like me) being too busy / lazy to come back and complain...  ::) However, this is not the first time I have had a problem with this place, and I will go back to talk with the manager. Can't talk with the owner because it is owned by several corporations... another problem. And, another reason to buy local - when I see the sales, I have to keep telling myself - you get what you pay for...

Looks like a great feast for Father's Day David!!! Glad I am not the only one who stayed home and did the cooking, I had more fun cooking for the family than I would going out to eat! Don

Don, my wife and kids don't always understand - but I would MUCH rather stay home and make a meal my family will enjoy than go to a restaurant. The kids, friends, dogs, etc. running around - "when is dinner?", etc... To me, that's one of the best parts of being a Dad!

 I don't see anything wrong with that plate Doc!  I'm pretty sure I could work with it...
And I think you should just dump that first fish source all together. The manager is probably the issue anyway. Send corp a letter telling them you have stopped shopping there all together because of it.
