Nice sale on Porterhouse steaks yesterday - $4.99 / #. Picked up two (my wife, youngest daughter, and dog are at the lake. Just me and Emma at home.) Turned out she had to work, so I was on my own.

Pre-seared the steak (just one!) - just a minute or so on each side. Put some W.O.W. and M3 in a bag along with a knob of butter (I like to say knob of butter, feels so Jamie Oliver.) Added the steak and put it in the hot tub (125*) for about two hours. During the last hour I sliced up some carrots, small potatoes, tomatoes, and lemons and tossed with EVOO, Kosher salt, and fresh ground pepper. Tossed the pan in the oven at 450*.

When the veg was about done, I put my favorite CI skillet on high and browned some butter. Then pulled the steak and put it on the skillet - just for a couple of minutes. Pulled the veg and added to the skillet with the steak and let it get happy. Some finishing salt and dinner was ready.

This was WAY to much to eat - but, dang it, I did it! It was good.
