Fish tacos with grilled Pineapple salsa
« Reply #-1 on: August 05, 2015, 07:54:54 AM »
Been saving a bunch of cooks until I have had time to upload and post.  I was craving a grilled fruit salsa after eating a really good mango, sadly when I went to get another one, they were not ready to be eaten so I had been getting some good pineapples so I changed it up for grilled pineapple instead, and it was great.  To the grilled pineapple I roasted a jalapeno from my garden on the grill for a little added flavor, and diced a plum tomato, and finely diced red onion.  Mixed together with a splash of white vinegar, tabasco, and a very small splash of OJ.  Seasoned with salt, pepper and fresh cilantro.  I used some grilled cod seasoned with Sweet Lou's Jerk seasoning (A+++++ on the flavor of it).  I did let the salsa sit for a couple hours to let it come together and enhance the flavors.  I little avocado  on the flour shell, then fish, then the salsa with a squirt of lime on top.  Overall really good, wished I had some Mahi Mahi, but I only had cod so I rolled with the punches and used that I had on hand. Thanks for reading and looking, enjoy.

Yes the Mahi Mahi would have been better, but certainly nothing wrong with that meal.
