LOL - I struggled with the idea of Sous Vide for a long time until Backyard Jack (Jaxon) convinced me to try it. Now I find my self using it very often.

I've resisted the torch. My reasoning (excuse) has been that when I finish the meal on the grill or stove or even under the broiler, I can continue to add layers of flavor with a variety of seasonings, rubs, sauces, etc... So, I've felt that the torch would limit my options to just heat.

I am not sure if that is true and look forward to hearing from folks with different opinions.

You can't catch a fish if you don't get a line wet...

Yeah but it brings nothing to the table, flavor wise. Finish over hot coals and you get yourself some smokiness.

I've used my chimney starter many times to get a good sear on a steak.  Put a grate on top and let it heat up. It will sear the heck out of a piece of meat including your fingers...  :o ;D
