Pierogi Casserole

If you like pierogis, you've got to give this a try!

Our family loves Pierogis. Homemade pierogis are always better but take a good bit of time to make. So, I was thinking, "Why not make a Pierogi Casserole using lasagna noodles?"  OK, let's give it a try.


My daughter & I boiled some Lasagna noodles until tender & whipped up about 10 cups of instant mashed potatoes. We seasoned the water with a little salt, garlic powder, black pepper, paprika, 2 tsp of Onion Powder & 1 TBS of dried Chives. When the water boiled we added the milk, butter & about a cup of finely minced onion, brought it back to a boil & added the potato flakes.

The lasagna noodles & mashed potatoes were then layered into a baking dish (just like a lasagna), topped with some cheddar & put in a hot grill to bake for about 15 - 20 minutes.



This was really delicious, and it was super easy, quick & inexpensive to boot. A definite keeper!
