I've never been a big fan of cod - conjures up images of Lutefisk... yikes!

But my youngest daughter wanted some, so I said ok. Found some frozen filets, added some butter, Old Bay, sea salt and fresh ground pepper, then a couple of sprigs of dill and some lemon slices... sealed them up and dropped them in a 132* sauna for about 45 minutes.

Meantime, I made my favorite roasted veg platter - some small red potatoes sliced thin, asparagus, small carrots sliced in half and tossed with olive oil and lemon juice - roasted at 450* for about 45 minutes.

A quick sear on each side - about a minute each...

Put them all on a platter with another squeeze or two of lemon juice... who says cod has no flavor... ?

Rocky and her friend pretty much killed that platter - I got a small taste... liked it... lol. We agreed tomorrow is salmon. Bigger filet and platter... :)

That looks super, nice job! I can't quite do the lutefisk thing either but I love torsk, which I think is just steamed cod. The local Norse Glee Club and Sons of Norway have a couple of "feeds" every year as fundraisers. Torsk with drawn butter, homemade meatballs and gravy, coleslaw, boiled taters and lefse all served family style until you can't eat any more. I tried the torsk dinner first and loved it, then got hornswoggled into a lutefisk one. Same menu but lutefisk instead of torsk. Still do the torsk one, but once was enough on the lutefisk!

I am with you on torsk... can't do lutefisk. My wife's family has a Christmas Eve tradition - Swedish meatballs, potato sausage (never could get used to all spice) and lutefisk. I have a mug that says - Just Say No to Lutefisk!... I have the corn and green beans... my family had spaghetti... those were the days...
