Gazpacho, Part 2

Time to test taste the gazpacho.  To me it needed a wee bit more salt.  Otherwise the flavors were spot-on.  Here is the first bowl.



Still missing something.  I wonder…  I know, lets add one more “garnish”.



THAT’S more like it.  My wife saw my bowl and said, “Why didn’t you use some bacon for my garnish?”  Here, dear, I’ll share my bacon.

Next time I will cook more bacon.  That is never a bad thing.

Looks amazing ,  i will put a tbsp of this Gazpacho in an omelet or in huevos rancheros .

The last time I ate gazpacho was on a trip to Majorca in 1970.  Haven't had any great longing for it since.  However, seeing it with BACON in it revives some interest  ::)

There are a lot of the same ingredients in a Peperade as there are in Gazpacho.  You could add a few things and heat it up to use with an omelette.
