Great side dish or main dish--smoked sausage, potatoes, onions and cheese

Y'all all probably know this dish already. I do it in the oven but I think it could be done on the grill, or even in the SRG. It has become a favorite here at the house.

1 one pound package smoked sausage cut into 1/2 inch-13/16th inch rounds
l large onion peeled and chopped
5  large Idaho potatoes cut into 1/2 inch cubes
Olive Oil
sea salt, fresh ground black pepper, paprika and dried thyme to your liking.
1 cup grated cheddar cheese. You can use more if you want.

Here's what you do with the stuff:
400* oven, Double line sheet pan with foil.
Spread  some oil over sheet pan to keep the stuff from burning.
Put sausage , onions, and potatoes in bowl and toss with EVOO. Season with salt, paper, paprika, and thyme
Spread evenly on  sheet pan.
Roast for 45 minutes to an hour.  Toss about the last 15 minutes and bake till golden brown or tender.
Turn off oven. Scatter cheese on top and leave in oven till melted.

Then take it out and enjoy.

If you ain't got no sheet pan, you can use a baking pan, piece of old tin, Coke cola sign or any thing flat that won't melt.

Dee, that does sound good. Maybe you could give us a demonstration at Jaxon's Gathering just so we could see how to prepare it properly. And of course, taste it, too.
