Cooked a 4.25lb. eye of round roast in the hottub for 30 hours at 131F. Put in ice bath and then refrigerated overnight. For dinner last night I sliced off a couple 1 1/2" steaks, just a dab of EVOO on each then a nice dose of a homemade coffee, cocoa nib rub. GG's got preheated in a very hot PK grill and then the steaks got thrown on. After a good sear they were plated with a purple potatoe, kale salad with a garlic vinaigrette. Very tasty and quite colorful!
