SV Eye of Round Roast

Cooked a 4.25lb. eye of round roast in the hottub for 30 hours at 131F. Put in ice bath and then refrigerated overnight. For dinner last night I sliced off a couple 1 1/2" steaks, just a dab of EVOO on each then a nice dose of a homemade coffee, cocoa nib rub. GG's got preheated in a very hot PK grill and then the steaks got thrown on. After a good sear they were plated with a purple potatoe, kale salad with a garlic vinaigrette. Very tasty and quite colorful!

Sounds great. Love the look of that salad! Did the meat taste as good as it looked?

It did! And you would be hard pressed to not think that you were eating a filet! Great cut of meat for the SV. Was fork tender with a nice beefy taste. Sliced up the remainder very thin for sammies too.

I usually have a couple of eyes of round in the freezer for jerky. Now SWMBO has to decide whether to let them be used for a different purpose. Not my problem - after this post I'm willing to adapt either way (or both).

I've done several eyes with the Anova, but never thought to cut it up for steaks. I put mine on the gasser for a couple of minutes to get a good color on the meat; this is on my list to try next time
