A Glut of Goat!

While James and I were on honeymoon, one of my coworkers here at MAK, Dennis, and his son took care of things on the farm for us.  As an added bonus, Dennis also butchered one of our wether (castrated) goats for us while we were away. 

The meat is a beautiful deep red color:



First up on the menu was goat curry-- I put the chunks of goat in the slow cooker and covered with chicken broth, then mid-day added in a whole boatload of curry powder and some other spices which escape me at the moment.  After I got home from work, I thickened the sauce up with a big of coconut flour.   Nice and lightly spicy!




In addition to providing his excellent knackerman services, Dennis has been getting into making some of his own sausage.  He was kind enough to give us three sample mixes to taste-- the one we liked best was this recipe:
" 6 lbs goat meat, 2 lbs bacon ends and pieces, fine grind. Add 3tsp fine chopped garlic, 2tbs salt, 2tsp pepper, 4tsp fresh ground caraway seed, and 2 cups bread crumbs. Mix well and enjoy! "

And enjoy we did!!!  We ended up with 8 lbs of goat sausage, which seems like a lot, until you want to use it in EVERYTHING because it's so delicious. :)   We mostly have just been eating it as little sausage patties, since it's amazing on its own.   I did have a wee bit leftover in one bag over the weekend, so we made up some goat sausage gravy to serve over eggs and hashbrowns.   




And my latest goat meat treat has been using it in Vietnamese Pho soup.  I cheat and just use little packets of the pho broth, get that boiling, drop in thinly sliced goat meat, and pour it all over rice noodles.  It's usually served with Thai basil, jalapenos and bean sprouts, but all I had on hand was cilantro, which wasn't too shabby.  Also drizzled some hoisin sauce and sriracha into it as well.   Super comfort food! :) 



We've still got some packages of meat in the freezer, so I'm sure we'll enjoy plenty more meals out of our 1/2 of a goat! :)  We'll likely be ending up with a steady stream of goat for awhile-- we had 5 babies this year, then our buck broke into the female pen a couple of months ago, so we've got yet ANOTHER batch of babies on the way in the next few months.   Never a dull moment!
