Got some venison from a local hunter that wanted some slim jims.
I will let the pics do the talking.
Starting to de bone the venison
Hanging to dry the casings some before smoking.

Can you give us some time and temps to go by for a cook like this? Several folks here have cabinet smokers or various brands - and will probably want ot try this.
Recipes? I will bet you have a lot of them that you could contribute. You are known by your reputation, and are well thought of as a cook - so cough it up big guy! ;D
