Sous vide
Few wings in a sous vide at 147f for 6 hours .
My hot BBQ sauce .
First i grilled them for a minute or two mixed in the sauce and back to the grill for another few minutes .
Back to the sauce and to my plate .

Those are some great looking wings! How was the taste and feel - like "normal" wings?
You can't catch a fish if you don't get a line wet...

They do look good! I love BQ wings. And sometimes I crave deep fried chicken wings....SO-

Ever wonder what would happen if - after they are cooked Sous Vide, then you:

1. Place them on a wire rack above a cookie sheet - then into the fridge for 24 hours.

2. Now, that much of the moisture in the skin has evaporated ( but the chicken will remain moist...) LIGHTLY spritz them with oil.

3. dredge them thru a 50-50% mix of corn starch and 00 grade flour ( or cake flour )

4. Now - grill them.

HINT: They will be crispy as if they were deep fried.... ;) ;D

I agree - it is easy to show that done properly, frying adds very little fat / oil to the food. But the mess & clean-up - YIKES ??? ??? ???

Ahron, that sounds like it would turn out.

I have the Anova sous vide and I have some wings.  I also have some sauce and a grill.

Either will work -but, with your grill you can influence the flavor more by adding a little cold smoking just prior to grilling with heat ;)
